Grammie's Oatmeal Bread
You will love this one I'm sure! It was, of course, a favourite of our family growing up. I remember mom making it all the time and dad not waiting for it to cool before slicing off the heel and slathering it with butter. I loved it as toast with mom's strawberry jam for breakfast. UMMMM umm Good!! Put 2 Cups Oatmeal and 1/4 Cup Shortening in a large bowl.
Add 3 Cups boiling water and stir until shortening melts.
Let sit for 20 minutes.
Meanwhile: Add 2 tsp of Sugar to 1 Cup lukewarm water. Add 2 tbsp yeast and let rise for 10 minutes.
Combine the yeast mixture with Oatmeal.
Stir in 2/3 Cup Molasses and 4 tsp Salt.
Add 5-7 Cups All-Purpose Flour, kneading in Flour as needed.
Knead for about 10 minutes.
Cover with damp cloth and let rise 1 hour.
After rising, divide dough into 4 parts and shape into loaves and place in greased pans.
Let raise another hour.
Place in 400 oven for 25-30 minutes
Rub butter over tops of loaves to keep it soft and oh, so tasty!
